I’ve heard good things about adding cauliflower with mac & cheese, but it was a big ol’ fail for us. The Munchkin saw that his lunch was different and picked the noodles out. Messy and counterproductive.
For the most part, this is pretty easy. Cut up your cauliflower into really little bits, and add them to the water you’re cooking your noodles in. This should soften them up, so they’ll theoretically be soft like the noodles. The similar color should make them undetectable to your toddler. I’m thinking I added the cauliflower too late, so maybe it wasn’t soft enough? He took one legit bite and was like “Wait a minute…” My neighbor, however, swears by this for her kids.
